Raw Shrimp, Easy Peel, Headless Shell-on
Easy Peel Shrimp is just what the name implies, shrimp that is easy to peel. An easy peel shrimp is a raw shell-on shrimp with a knife cut along the back of the shrimp from the 1st to 5th shell segments. During the processing of the shrimp, the large intestine is removed.
There are two basic forms of easy peel shrimp, a ‘standard cut’ where depth of the cut is 25% of the whole shrimp. The other is a ‘deep cut’ where the depth is 45% of the whole shrimp. The intent behind the deep cut is to expose more of the shrimp meat during processing and thus increase the weight added when phosphates are being used.
Traditionally, easy peel shrimp was mostly sold as a retail item, but in the last few years, the foodservice industry has adopted this item as well.
